Vegan Watermelon Popsicles

Watermelon Popsicles

Course Dessert
Servings 6 popsicles

Ingredients

Red Layer

  • 6 wooden popsicles sticks
  • 1/2 mini watermelon
  • 1 tbsp brown sugar
  • 4 tbsp maple syrup
  • 1/4-1/2 cup raisins
  • 1 lemon

White Layer

  • 1/4 cup coconut milk
  • 1 tbsp maple syrup

Green Layer

  • 2 kiwi
  • 2 tbsp maple syrup

Instructions

Red Layer

  1. Blend watermelon, brown sugar, 2 tbsp maple syrup and lemon juice together. Strain mixture 2-3 times depending on preference. Don’t worry about the seeds, they will blend down or get caught in the straining process. Pour mixture into mold and freeze for 2 hours. *prepare Green layer now and then place in the fridge until ready to use.

  2. After 2 hours have passed, remove mold from freezer and mix in raisins. I had to break the popsicle but it refroze just fine. Since the popsicle is about 3/4 frozen, you will have more control over where the raisins sit. You can use a popsicle stick to push them around. Place back into freezer and freeze until solid (approx 1.5 more hours)

White Layer

  1. Whisk both ingredients together. Add white layer to frozen red layer. Freeze for another 40 minutes.

Green Layer

  1. Blend together, no need to strain. Add green layer on top of white layer and freeze at least 2 more hours or just wait until the next day.

Vegan Rocky Road Popsicles

Ingredients

  • 2 oz Baker's Chocolate
  • 3 tbsp maple syrup
  • 1/2 cup non-dairy milk
  • 1/2 pint non-dairy vanilla ice cream (I used So Delicious brand)
  • 1/4 cup non-dairy milk
  • 2 tsp cacao powder
  • 1/2 cup chopped vegan marshmallows (purchased from Trader Joe's)
  • 1/4 cup almonds
  • 1/4-1/2 cup chocolate chips or chunks

Instructions

  1. Cut about half the bag of Trader Joe’s marshmallows into small pieces. You’ll want to dip your fingertips in water to help keep the marshmallows from sticking to you.

  2. Melt down baker’s chocolate on almost lowest heat setting and stand over it and stir until it is all melted. YOU MUST NOT LEAVE UNATTENDED or it may burn. Should only take a few minutes.

  3. Add the melted chocolate to a small mixing bowl and then pour a thin layer of non-dairy milk over the chocolate (approx 1/4 cup). Add 3 tbsp maple syrup and coconut yogurt. Add 1/2 pint of non-dairy vanilla ice cream. Add cacao powder and a 1/2 cup almond milk. Mix well.

  4. Add toppings to popsicle molds and then stir in popsicle mixture.

  5. Freeze overnight.

Vegan Coconut Mango Popsicles

Course Dessert
Prep Time 10 minutes
Servings 6 popsicles

Ingredients

  • 2 mangos (chopped)
  • 1 can coconut milk
  • 1 frozen banana
  • 4 tbsp maple syrup

Instructions

  1. Cut mangos and place them into popsicle molds

  2. Blend 1 can of coconut milk, 1 frozen banana, and maple syrup

  3. Pour over mangoes and stir to lift the mangos around the mold

  4. Freeze 4 hours or overnight

Vegan Watermelon Popsicles

Vegan Coconut Berry Popsicles

Course Dessert
Prep Time 15 minutes
Servings 6 popsicles

Ingredients

  • 1 cup mixed berries
  • 1 tbsp coconut yogurt
  • 3 tbsp water
  • 8 tbsp coconut nectar or agave maple
  • 1/2 can coconut milk
  • 1 frozen banana

Instructions

  1. Blend together berries, coconut yogurt, water, and 4 tbsp sweetener. Pour mixture into popsicle mold.

  2. Blend 1/2 can coconut milk, 1 frozen banana and 4 tbsp sweetener of choice.

  3. To do separate layers, freeze the berry mixture in the mold first for 3 hours and then add the coconut milk and banana mixture.

  4. Or you can mix both mixtures together for a marble effect. Freeze minimum 5 hours, preferably overnight.

Vegan Coconut Chia Almond Popsicles

Course Dessert
Prep Time 10 minutes
Servings 6 popsicles

Ingredients

  • 1 frozen banana
  • 1 can coconut milk
  • 2 tbsp coconut nectar or maple syrup
  • 1 tbsp chia seeds
  • 1/4-1/2 cup sliced almonds (as garnish)

Instructions

  1. Blend, banana, coconut milk and sweetener for about 1 minute.

  2. Add chia seeds and stir.

  3. Add mixture to popsicle molds and garnish with sliced almonds.

  4. Freeze minimum 5 hours, preferably overnight.
