Deep-Fried Cinnamon Bananas

Something about cinnamon and fried bananas conjures up images of breakfast on the beach in an breezy Air BnB with the softest touch of sun on my skin. While not the simplest, quickest breakfast recipe to have in your arsenal, it definitely is hard to make these without love. You can tweak this recipe any way you like it. Love cinnamon? Pile it on. Want a crispier banana? Add some panko crumbs and go heavy-handed with the arrowroot powder. More of a savory breakfast person? Ditch the coconut milk for regular milk, skip the condensed milk, and add a pinch of salt.

Deep-Fried Cinnamon Bananas

Deep-Fried Cinnamon Bananas

Ingredients

  • 4 bananas
  • 1-2 cups sunflower oil
  • 1 cup flour
  • 1 cup coconut milk
  • 1 flax egg
  • 1/4 cup cane sugar
  • 1 tbsp cinnamon
  • 1 tsp vanilla
  • 1 tsp arrowroot
  • 1 tsp baking powder
  • 1/4 tsp salt
  • vegan condensed milk
  • cinnamon for garnish (optional)

Instructions

  1. Peel and slice bananas into 1 1/2 inch pieces and set aside.

  2. Place the wet and dry ingredients into separate mixing bowls. Mix each bowl well.

  3. Heat the sunflower oil on low-medium heat and begin to drop the banana pieces into the wet mixture and then the dry mixture. Shake off any excess batter and then slowly set into the oil.

  4. Let the pieces cook on each side until brown. Place cooked bananas onto a paper towel to soak up the excess oil. 

  5. Serve with chilled or room temperature vegan condensed milk. Brand option below.
